Citrus Parfait

CITRUS PARFAIT WITH ORANGE AND PINEAPPLE

Ingredients:

500ml Cream, whipped
3 Egg whites
200g Castor Sugar
Zest of 1 Orange
Zest of 1 Lemon
Zest of 1 Lime

2 Oranges
1 Pineapple

Method:

o Whisk cream until soft peak stage.
o Whisk egg whites to soft peak stage in separate bowl. Slowly add the sugar, one spoon at a time, whisking between each spoonful. This will form a meringue.
o Fold cream, meringue and zests together.
o Place in a container and freeze immediately.
Allow to freeze overnight.
o Serve with sliced oranges and pineapple
