Deep Fried Polenta served with Smoked Salmon



170g (1 cup) polenta
500ml water
500ml vegetable stock
100g Parmesan cheese, grated
1 tsp parsley, chopped
1 tsp thyme, chopped
Salt & pepper

* Grease baking trays.
* Bring the stock and water to the boil.
* Gradually add the polenta, stirring constantly.
* Reduce the heat and cook until the polenta thickens.
* Add the parmesan cheese and herbs.
* Pour into the trays and refrigerate until firm.
* Cut and deep fry or grill in a hot grilling pan.

Serve with Honey roasted Butternut and Beetroot, or Smoked Salmon with Capers.
Garnish with a good handful of seasoned Rocket leaves.
