Summer Fresh Bacon and Prawn Skewers

BACON WRAPPED PRAWN SKEWERS WITH A RASPBERRY AND GRAPE SALSA

Yield: 2 items

Ingredients:

6 Tiger Prawns, peeled and cleaned with heads off
1 pack of Streaky Bacon
10g Coriander leaves
1 Garlic clove, crushed
2 Bamboo skewer sticks
10g Rocket
ΒΌ Cucumber
5 White grapes, finely diced
5 Raspberries, lightly broken up
5 ml Raspberry vinegar
5ml Olive oil
Garnish: Zest of 1 lemon and finely sliced red pepper

Method:

o Rub crushed garlic onto peeled prawns and season with salt and pepper.
o Place a coriander leaf on each prawn and wrap individually with strips of streaky bacon.
o Ensure that the join of the bacon is facing the same way on each prawn and place 3 on each skewer.
o Shallow Fry in a pan for about 4 minutes on each side.
o Shave the cucumber in long strips and create a small salad with the rocket.
o Drizzle the salad with olive oil and season with salt and pepper.
o Gently mix the grapes, raspberries, vinegar and oil together.
o Enjoy immediately.

(Just keep them in a cooler box until you’re ready to cook them, food poisoning on valentine’s day is not very attractive.)
